Oatmeal can lower LDL cholesterol without affecting HDL levels (good cholesterol). The soluble fiber of oatmeal lowers LDL levels when digested. Digested fiber absorbs LDL cholesterol and becomes sticky in the intestines to prevent absorption. Then, rather than being absorbed into the bloodstream, the body is left with waste.
